Chestnut honey

Api Selvatica produces chestnut honey on the mountains of Modena, in Zocca, located along the European chestnut Road, in Guiglia and Polinago. This plant blooms in early June.

Chestnut honey is dark, amber colored.

It has a very strong and aromatic scent, bitter, reminds of the flowers from which it comes and dried chamomile.

It tastes not very sweet and has a bitter aftertaste, reminds of the smell.

The crystallization takes place between 5 ° C and 25 ° C, around 14 ° C occurs faster and is determined by the percentages of glucose and fructose present in honey, the higher is that of glucose the greater the speed of crystallization (the honey is 75% formed by monosaccharides glucose and fructose).

Honey can be stored in the freezer.

The light deteriorates faster the organoleptic characteristics.

The production and the availability of polyfloral honeys vary depending on the climatic conditions of the season.
