Linden honey

Api Selvatica produces linden honey on the hills of Modena. This plant blooms between the end of May and the beginning of June.

Linden honey is light yellow when liquid, almost white when crystallized.

It has a medium intense and aromatic, fresh, balsamic aroma, almost reminiscent of menthol.

It has a medium sweet taste, and an intense and fresh aroma of menthol and camphor that is reminiscent of its smell.

Lime honey spontaneously starts the crystallization process after a short time.

The crystallization takes place between 5 ° C and 25 ° C, around 14 ° C occurs faster and is determined by the percentages of glucose and fructose present in honey, the higher is that of glucose the greater the speed of crystallization (the honey is 75% formed by monosaccharides glucose and fructose).

Honey can be stored in the freezer.

The light deteriorates the organoleptic characteristics more quickly.

The production and availability of monofloral honeys vary according to the climatic conditions of the season.
